Oat and Rice Energy Bar

With my increased mileage from the half marathon training I’ve been spending a fortune on protein and energy bars. These things are not cheap, we’re talking £2-3 a time. If I’m running a good mileage three or four times a week that’s £10 plus.  So I’ve decided to go and bake my own. I’ve taken a mix of my favourite ingredients and read up on a few recipes online and then experimented….these are the results.

 

 

Energy Bars – Ingredients

  1. 150g Oats
  2. 110g Brown sugar
  3. 30g Brown puffed rice (2 cups approx)
  4. 50g Butter (or earth butter for gluten free option)
  5. 110ml Runny honey
  6. A handful of dried fruit
  7. 1-2 tbsp chia seeds (optional)
  8. A handful of chopped nuts (I used pecans but choose any).
  9. 2 tsp Vanilla extract

Steps

  1. Melt the honey, butter and sugar together in a pan until all the sugar has dissolved.
  2. Add in the vanilla extract.
  3. Optional: Roast the nuts and oats in the oven for a few minutes, be careful not to burn them.
  4. Mix all the other dry ingredients together in a bowl.
  5. Poor in the caramel and mix until all combined.
  6. Then add the oats and nuts and continue to mix.
  7. Pat down in to a baking tin with parchment paper and spread out evenly.
  8. Add some parchment paper on top and cool in the fridge for 2 hours.
