With my increased mileage from the half marathon training I’ve been spending a fortune on protein and energy bars. These things are not cheap, we’re talking £2-3 a time. If I’m running a good mileage three or four times a week that’s £10 plus. So I’ve decided to go and bake my own. I’ve taken a mix of my favourite ingredients and read up on a few recipes online and then experimented….these are the results.
Energy Bars – Ingredients
- 150g Oats
- 110g Brown sugar
- 30g Brown puffed rice (2 cups approx)
- 50g Butter (or earth butter for gluten free option)
- 110ml Runny honey
- A handful of dried fruit
- 1-2 tbsp chia seeds (optional)
- A handful of chopped nuts (I used pecans but choose any).
- 2 tsp Vanilla extract
Steps
- Melt the honey, butter and sugar together in a pan until all the sugar has dissolved.
- Add in the vanilla extract.
- Optional: Roast the nuts and oats in the oven for a few minutes, be careful not to burn them.
- Mix all the other dry ingredients together in a bowl.
- Poor in the caramel and mix until all combined.
- Then add the oats and nuts and continue to mix.
- Pat down in to a baking tin with parchment paper and spread out evenly.
- Add some parchment paper on top and cool in the fridge for 2 hours.
